8 small to medium red potatoes, cut into 1/2” cubes

2 Tbsp. cooking oil

1/2 medium onion, cut in thin wedges

1/4 tsp garlic powder

1/2 tsp fresh ground pepper

2 tsp. chopped parsley

1/4 tsp. paprika

1/2 tsp. salt

Heavy duty aluminum foil


Mix all spices together. Place potatoes and onions in large bowl. Add oil and spices. Place potato mixture in 2 to 4 separate foil pouches or make individual pouches for each person. To make pouches, lay out a large piece of foil; place potatoes in center of one side. Fold foil over to cover potatoes and fold edges three times on each open side to tightly seal packets. Place packets over medium heat (about 350 – 400º) on grill, cooking until tender, about 30-35 minutes. Turn every 15 minutes.
