Gluten-Free Crumble Topping for Blueberry Muffins
As if Blueberry muffins aren’t enough, add that extra twist that is sure to satisfy.There is just something cool about a muffin with a nice crumble topping. Just because you have to go gluten free, doesn’t mean you can’t discover all the differences that make gluten-free dining a treat. Bring this special topping to your homemade blueberry muffins recipe. I adapted our Blueberry Muffin recipe to include this gluten-free crumble topping for blueberry muffins. It makes them more of a special treat for special company, a fancy brunch or just for yourself! Leave an extra 1/2 inch of space in the top of your muffin pan to add this yummy topping to your muffins.
Recipe
1/2 cup gf Jules gluten-free, all purpose flour
1/2 cup brown sugar (packed)
1/4 cup cold, cubed butter
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
Directions:
Combine dry ingredients In a small bowl, mixing gluten-free flour, brown sugar, cinnamon and salt with a whisk.
Slice cold butter into square slices. Cut butter into the flour mixture until it becomes coarse crumbs.
Top the muffins with the crumble topping generously atop the muffin batter using a lined cupcake tin.
Bake muffins as directed; use a toothpick inserted into the muffin to be sure it is done. When the toothpick comes out clean, the muffin is done.
