Gentleman Jim’s Oven Baked Pork Ribs
When someone shares a great recipe like these Oven Baked Pork Ribs, with any luck you’ll get invited for dinner to try it. That’s what happened to us over 20 years ago at Mountain Valley Living Magazine. Jim Easterling, who was prior owner of the establishment Gentleman Jim’s in Vallejo, CA had moved to the little town of Westwood where he quickly became known for being a great chef.
He shared this recipe for Oven Baked Pork Ribs with us:
Oven Baked Pork Ribs
DRY RUB for pork, chicken, steaks, etc.:
Mix 1 Tablespoon of each:
Salt, Paprika, Cayenne, Granulated Garlic, Cumin, Italian Seasoning and Chili Powder. Mix together well.
CAJUN RIBS:
Use a portion of the Dry Rub as needed to cover ribs (use the above recipe)
Preheat oven to 350º. Cut each rack of ribs into 3 – 4 sections. He cooked two racks of baby back pork ribs. Brush Dijon Mustard on rack of baby back or regular pork ribs. Pat in Dry Rub. Start with only a portion of the Dry Rub, depending on the amount of ribs to cover. This will also enable you to save any extra (untouched) rub for future use.
On a baking baking sheet pan, wrap foil over the ribs. Bake 1 hour, 15 minutes. Then remove foil and set juice aside. Lower temp to 250º and bake one hour more. Lower temp again to 225º. Pour reserved juice over ribs and bake 1 hour more. Remove from oven.
Turn on broiler. Brush Bullseye original flavor barbecue sauce over ribs. (or try your favorite barbecue sauce) Broil 2 1/2 to 3 minutes on each side or until golden brown.
