Rib-Eye is a great fatty meat choice when on a keto diet and the bleu cheese butter just bumps up the fat and adds amazing richness to the meal. -A great add-on: Sauté mushrooms and onions separately in butter to serve with steaks.


2 Rib-Eye Steaks

2 Tablespoons Olive Oil

1 Clove Garlic, sliced thin

Salt, Pepper & Cayenne Pepper 

4 Tablespoons Bleu Cheese

2 Tablespoons Butter, softened

1/2 tsp. chopped chives


Cut small slits into each steak to insert the garlic slices. Coat with the olive oil and sprinkle with salt, cayenne and pepper to your taste. Grill steaks, covered, over medium heat  for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Combine blue cheese, chives and butter. Serve with steaks, melting on top or on the side.
